Taste of Italia: Spaghetti Aglio, Olio e Peperoncino

Here in Italy, our approach to cooking defines almost all of our most popular dishes. First, we believe that a few high-quality ingredients can bring more to a dish than a complicated recipe. Each ingredient is carefully considered, chosen not just for its individual flavour, but for what it adds to the flavours around it – meaning that while a dish may seem simple, it’s actually anything but. Then there’s the method. We cook with passion and care, following the culinary traditions that have been passed down through generations.

There’s perhaps no dish that exemplifies this approach as much as this minimal spaghetti recipe. Using just a handful of ingredients, the recipe lets the pasta stand proudly as the centrepiece of the dish, with garlic, chilli, lemon and parsley adding a vibrant mix of flavours – the perfect choice for a romantic dinner.

200g spaghetti
30ml olive oil
3 large cloves of garlic
1 tbsp chilli flakes
Handful of parsley
1 lemon


Start by bringing a pan of water to the boil, seasoning with plenty of salt.

Once the water is boiling, add your spaghetti and cook for 8-10 minutes until perfectly al dente.

While the spaghetti is cooking, prepare your ingredients – slice the garlic cloves, zest the lemon and finely chop the parsley.

Next, heat the olive oil in a large frying pan on a medium heat, before quickly frying the garlic until it is just starting to turn golden.

Then, add your chilli flakes. Drain the spaghetti and add it to the hot pan, tossing it constantly to coat it in the oil, garlic and chilli.

After a few minutes, turn off the heat and add the lemon zest and parsley.

Stir to combine all the ingredients and season to taste. Serve the pasta, with plenty of grated parmesan over each serving.
